Chicken with California Pistachio Sauce

2 whole chicken breasts,
skinned, halved and boned
1/8 teaspoon pepper
1 tablespoon oil
1/2 cup orange juice
1/2 teaspoon grated orange peel
2 tablespoons water
2 teaspoons lemon juice
3 tablespoons sliced green onion
1/4 cup chopped shelled natural
California pistachios

Pound chicken breasts to 1/4-inch thickness;
season with pepper. Saute in oil 2
to 3 minutes on each side. Add orange
juice, water, lemon juice and orange peel.
Simmer, covered, 10 minutes or until
Chicken is tender. Remove chicken. Add
Green onion to pan; cook over medium
heat until slightly thickened. Pour over
chicken. Season to taste. Sprinkle with
pistachios. Makes 4 servings. Less than
250 calories per serving.
